
Ingredients
2 Tablespoons Melted Butter
2 Tablespoons Unsweetened Peanut Butter
1/4 tsp Pure Monk Fruit Sweetener
1 tsp Vanilla Extract
1 Egg
1 Cup Almond Flour
½ Teaspoon Baking Powder
¼ Teaspoon Baking Soda
¼ Teaspoon Pink Salt
2.5 TBS Sugar Free Chocolate Chips (I use ChocZero)
Optional: After cookies cool, drizzle Choczero Chocolate Hazelnut Spread on top!!! DELISH.
*Makes about 8 smaller cookies. Double recipe for a bigger batch of cookies!!!*
How You Do:
In a medium bowl whisk melted butter, peanut butter, pure monk fruit sweetener, vanilla extract and egg until smooth.
In a separate medium bowl whisk almond flour, baking powder, baking soda and salt.
Add flour mixture to butter mixture and mix until well combined.
Add chocolate chips into the mixture and stir in (you might need to knead them in, as the dough is very dense and sticky at this point!).
Roll dough into about 8 small balls with your hands and then flatten slightly on parchment lined baking sheet (adjust size of cookie to your liking!).
Bake for 15 minutes at 350 degrees in a preheated oven. Allow cookies to cool and then enjoy!!!
